Italy is home to the largest variety of olive cultivars in the world, more than 500 in total. Paliano is home to the Rosciola variety, a type of small olives that want to be harvested when they begin to turn red. Only then do they release all their delicate aroma and organoleptic properties.
The small size of the olives, results in an equally small production of oil, making it particularly valuable.
When the olives are ready, we have only a few days to pick them and call our neighbors to join us in the harvest. Every night we take the day's harvest to the oil mill to produce the best oil possible.
Our oil is produced exclusively by cold pressing 100% Rosciola.
